Yummy Healthier Banana Bread

photo 2 (3)I’m not claiming this banana is the healthiest recipe out there but I did manage to come up with a recipe that is a little healthier than others while still keeping the great, traditional banana bread flavor. In fact, I didn’t even tell my husband I made healthy substitutions until after he tasted it and told me how much he liked it.ย  ๐Ÿ™‚ I replaced half the butter than I would normally use with low fat Greek yogurt, I reduced the sugar, used unsweetened almond milk instead of regular milk, used unsweetened applesauce instead of oil,ย  used one whole egg instead of two, and replaced half the flour with whole wheat flour. These minor changes reduced the fat and calories. It’s not a drastic change but every little bit in your diet can help when you are trying to eat better. ๐Ÿ™‚

Ingredients:

  • 1 cup granulated sugar
  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 2 large eggs
  • 3 ripe bananas
  • 1 tablespoon unsweetened almond milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions:

1. Preheat the oven to 325 degrees F. Grease a loaf pan.2. Cream sugar and butter in a large mixing bowl until light and fluffy. Add the whole egg and mix well. Add the egg white and mix well.
3. My bananas were almost ripe enough but needed just a little push so I put them in a preheated 350 degrees F oven for 10 minutes and they ripened up perfect! They come out a scary black and a little slimy on the inside but they work great!

In a small bowl, mash the bananas with a fork. Mix in the almond milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
photo 3 (3)4. Add the banana mixture and Greek yogurt to the egg mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
photo 4 (3)5. Pour batter into loaf pan and bake 50-60 minutes or until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Enjoy!
