Summer is just around the corner and the weather is finally warming up. I love this time of year because it’s the time to bring out the flip flops, tank tops, bathing suits, and make delicious, refreshing desserts! Parfaits always remind me of the summer and I wanted to make something with lemon because it’s a perfect summer time flavor. This was my first time to make lemon curd and I had to make it twice because the first attempt was an epic fail! The flavor was off and texture was runny. So I went back to the drawing board and found a new recipe that worked perfect! It came out thick and creamy with a wonderful lemon flavor. It was so good that my husband ate two! It’s always a good sign when people get a second helping and you know you made something really tasty 🙂
This lemon curd recipe was adapted from a recipe on kitchenconfidante.com
Ingredients for Lemon Curd
- 1 whole egg
- 3 egg yolks
- 1/2 cup lemon juice
- 3/4 cup sugar
- 4 tablespoons butter, but into cubes
Ingredients for Parfait:
- angel food cake
- cool whip
- strawberries (blueberries would be great too)
- lemon curd
1. To make lemon curd: in a saucepan, whisk together the egg yolks and egg until combined. While whisking, pour in the sugar and lemon juice. Continue to whisk until the mixture is well combined (1 minute). On medium heat, whisk constantly until it thickens (8-10minutes). Remove from heat and stir in one cube of butter at a time. Strain into a bowl and cover with plastic wrap. Chill for one hour.
2. To make the parfait, layer each ingredient starting with cool whip. Add pieces of angel food cake, top with lemon curd and strawberries and finish with a layer of cool whip. Repeat if you have a larger container to fill. Enjoy 🙂
