I wanted to find a great Meatloaf recipe to show this is a yummy dinner and too often dismissed. I searched high and low for an awesome recipe with terrific reviews and I found the perfect one from I’m glad it turned out so well because that would have been a huge fail on about 1,ooo reviewers! It’s simple yet very, very tasty. The sauce on top is the perfect amount of tangy and sweet. There is nothing blah about this meatloaf…think twice before you brush off this recipe, it’s a must try! Cooking A-Z: L is for Lemon Parfait


Summer is just around the corner and the weather is finally warming up. I love this time of year because it’s the time to bring out the flip flops, tank tops, bathing suits, and make delicious, refreshing desserts! Parfaits always remind me of the summer and I wanted to make something with lemon because it’s a perfect summer time flavor. This was my first time to make lemon curd and I had to make it twice because the first attempt was an epic fail! The flavor was off and texture was runny. So I went back to the drawing board and found a new recipe that worked perfect! It came out thick and creamy with a wonderful lemon flavor. It was so good that my husband ate two! Cooking A-Z: K is for Key Lime Pie Bars

The letter “k” had some good recipe options to choose from and many were great healthy ideas. However, kale chips are not going to satisfy anyone’s sweet tooth in this house! I’ve never made key lime pie before so it was a perfect choice for me. I wanted to make them into bars because that just seems a little more fun than a pie 🙂 They turned very yummy and better than I ever expected! Cooking A-Z: J is for Jalapeno Poppers

I don’t like really spicy food but I am a fan of a tiny kick every once in a while. I like pepper jack cheese and spicy mustard on turkey sandwich every once in a while…I know, I live on the wild side! I am a fan of jalapeno poppers because they are fairly mild. Finding something to cook for the letter “J” was a bit of a challenge, there just wasn’t a lot to choose from.

When I decided on the poppers, I wanted to make a healthier version. I used lower calorie ingredients, egg whites, and I baked them inside of frying. They turned out really delicious! They were little balls of cheesy goodness with a spicy kick 😉 These are best served warm, out of the oven. I hope you enjoy!
