I love all kinds of salsa and this one with black beans and corn is one of my all time favorites. It’s fresh, simple and very healthy. It takes only a few minutes to prepare and with just a handful of ingredients…what’s not to love? 🙂 When I made this the other night, the entire container was gone by the end of the night! What is sad is I only got to sample it while I was making it 😦 But I love that everyone else enjoyed it so much. It makes me feel so good when I make something and the bowl is licked clean, haha. Enjoy 🙂

Just like any salsa, any ingredient can be easily substituted to tastes and fancy 🙂

Blackbean Salsa


  • 1 large tomato, chopped
  • 1 small white onion, chopped
  • 1 can of black beans low sodium (15 oz), drained
  • 1 can of whole kernel corn, no salt added (14 oz), drained
  • dried cilantro, to taste (if you dont use fresh)
  • 1 lime
1. In a large bowl, mix the chopped tomato, onion, beans, corn, and cilantro together until blended.
2. Cut the lime in half and squeeze the juice from both halves in the mixture. Mix and serve 🙂
