I love Mexican food but do not like preparing it. I would much rather be baking a cupcake or something much prettier. But I guess we can’t eat cake for breakfast, lunch, and dinner…can we?? Anyway, that’s why I came up with enchiladas that are not only delicious but only require 4 ingredients! I make these at least once a week for my husband and alternate between beef and chicken. It takes less than 45 minutes from start to finish which leaves me plenty of time to bake prettier food 🙂 Enjoy!
1 pound cooked ground beef (or chopped chicken)
1 1/4 cup salsa
¾ cup shredded cheddar cheese
3-4 flour tortillas
1.Preheat oven to 350 degrees
2. Cover the bottom of a baking pan with a thin layer of salsa to keep the tortillas soft, set aside.
3.Mix beef (or chicken), 1 cup salsa, and ½ cup cheese in a bowl. Stir well with a large spoon.
I like to add a couple drops of tabasco sauce J You can really add anything you want at this point and it would taste great…peppers, onions, etc.
4.Lay tortillas on a flat surface and divide beef/salsa mixture evenly between the tortillas.
5. Roll up the tortillas and place in the pan, seem side down. Cover the top with the rest of the salsa.
6. Bake 2o minutes. For the last 5 minutes, sprinkle the remaining ¼ cup cheese on top.
