I have never been a fan of Chicken Salad because there were too many ingredients and too much mayo, everything was very overwhelming. I’ve never been a big mayo fan. The only dish I really use it in is this one and a fruit salad. My husband really likes Chicken Salad and requested something new for lunch so I thought I would give it a chance and make it simple. He said it was delicious and three batches have been eaten in a week! I’m going to have to make a trip to Sam’s Club and buy a huge gallon of Mayo! Maybe not…I don’t want that much mayo in my pantry. Yuck. But, this chicken salad is great on a wrap, bagel, sandwich, or just to snack on by itself. Enjoy 🙂
