Chicken Salad Wrap

Chicken SaladI have never been a fan of Chicken Salad because there were too many ingredients and too much mayo, everything was very overwhelming. I’ve never been a big mayo fan. The only dish I really use it in is this one and a fruit salad. My husband really likes Chicken Salad and requested something new for lunch so I thought I would give it a chance and make it simple. He said it was delicious and three batches have been eaten in a week! I’m going to have to make a trip to Sam’s Club and buy a huge gallon of Mayo! Maybe not…I don’t want that much mayo in my pantry. Yuck. But, this chicken salad is great on a wrap, bagel, sandwich, or just to snack on by itself. Enjoy 🙂

Yield: 2 servings

  • 2 cups chopped cooked chicken
  • 1/4 cup light mayo
  • 1.5 stalk finely chopped celery
  • 1/4 finely chopped purple onion
  • 3 tbsp chopped almonds
  • 2 tbsp lemon juice
  • salt and pepper to taste
  • lettuce
  • flour tortillas

1.Mix chicken and mayo in medium bowl.
2.Add celery, onion, almonds. Fold ingredients to mix well.
3.Add lemon juice and salt and pepper to taste.
4.Arrange lettuce on tortillas. Add chicken salad mix on top of lettuce and fold tortillas. Serve and enjoy!
